Ingredients

  • 4 vine-ripened tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1 loaf Italian bread, sliced and toasted
  • 2 cloves fresh garlic
  • 2 tablespoons extra virgin olive oil (plus more for drizzling)
  • 1 tablespoon balsamic glaze
  • Garlic powder (to taste)
  • Sea salt (to taste)
  • Cracked black pepper (to taste)

Instructions

1

Prepare the Tomato Mixture

In a large bowl, combine the chopped tomatoes, basil, and thinly sliced red onion. Season to taste with garlic powder, sea salt, and cracked black pepper. Drizzle with olive oil, mix well, and set aside to marinate.

2

Toast the Bread

Slice the Italian bread and rub each piece with a clove of fresh garlic. Season lightly with salt and pepper, drizzle with olive oil, and place on a baking sheet. Toast in a preheated 375°F oven until golden brown.

3

Assemble the Bruschetta

Remove the toasted bread from the oven and allow it to cool slightly. Spoon the tomato mixture generously over each slice.

4

Finish and Serve

Drizzle with balsamic glaze, add an extra touch of olive oil if desired, and serve immediately.
