Baked Stuffed Shrimp

Ingredients

  • 10–12 jumbo shrimp, peeled, washed, and deveined
  • 3 sleeves Ritz crackers, crushed
  • 2 sticks salted butter, melted
  • 1/4 cup fresh chopped parsley
  • 3–4 tablespoons fresh squeezed lemon juice
  • Cracked black pepper (to taste)

Instructions

Prepare the Shrimp

Peel, wash, and devein the shrimp. Butterfly each shrimp by slicing along the back, being careful not to cut all the way through.

Make the Stuffing

In a large bowl, combine the crushed Ritz crackers and melted butter. Add the parsley, lemon juice, and black pepper, then mix until well combined. The mixture should hold together when pressed; add more butter if needed.

Assemble the Shrimp

Place a heaping tablespoon of the stuffing mixture into the center of each butterflied shrimp. Fold the shrimp tail over the stuffing and press gently to secure.

Bake the Shrimp

Arrange the stuffed shrimp in a baking dish. Bake uncovered in a preheated 375°F oven for about 30 minutes, until the shrimp are pink and the stuffing is lightly browned.
