Ingredients

  • 2 heads Cabbage (thinly sliced)
  • 1/2 lb thinly sliced Pepperoni
  • 1 can Cannellini Beans (do not drain)
  • 8 cloves fresh minced Garlic
  • 2 cups Water
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup Pecorino Romano Cheese
  • 1/4 cup Fresh Chopped Parsley
  • Red Chili Flakes (to taste)
  • Garlic Salt (to taste)
  • Cracked Black Pepper (to taste)

Instructions

Start the Base

Add a few tablespoons of olive oil into a large skillet. Add minced garlic and red chili flakes to taste, then lightly sauté.

Add the Pepperoni

Add in the sliced pepperoni and sauté until crispy.

Cook the Cabbage

Slowly start adding the sliced cabbage into the skillet, adding water little by little as it cooks down and wilts.

Season

When the cabbage has reduced in size, season to taste with garlic salt and cracked black pepper.

Add the Beans

Add in the cannellini beans along with their juice. Stir and reduce down until thickened.

Finish and Serve

Top with Pecorino Romano cheese, fresh chopped parsley, and a drizzle of extra virgin olive oil before serving.
