CHEESY BAKED GNOCCHI WITH A ROASTED GARLIC TOMATO SAUCE

Ingredients

  • 1 (28 oz) can San Marzano Tomatoes DOP
  • 1 lb. Potato Gnocchi
  • 4 tbsp Tomato Paste
  • 10 cloves Roasted Garlic
  • 1/2 cup Extra Virgin Olive Oil
  • 1 bunch Fresh Basil
  • Sea Salt (to taste)
  • Red Chili Flakes (to taste)
  • Garlic Salt (to taste)
  • Cracked Black Pepper (to taste)
  • 1 cup grated Pecorino Romano Cheese
  • 1/2 lb. Fresh Buffalo Mozzarella Cheese, sliced

Instructions

Add Garlic & Olive Oil

Add roasted garlic and a few tablespoons of olive oil into a hot sauté pan.

Season the Pan

Smash the garlic and add red chili flakes to taste.

Add in the Tomatoes

Stir in the tomato paste, then add San Marzano tomatoes. Crush them.

Add More Seasoning

Season with garlic salt and cracked black pepper.

Add Basil and Let Simmer

Add lots of fresh basil, stir well, and reduce to a simmer for 30–40 minutes.

Cook the Gnocchi

Meanwhile, bring salted water to a rapid boil. Add gnocchi and cook until they float to the top.

Build the Dish

In a large baking dish, ladle in some sauce, then add half the gnocchi.

Create Layers

Mix well, add Pecorino cheese, then layer the remaining gnocchi and sauce.

Final Layer

Top with fresh mozzarella, drizzle with olive oil, and add fresh basil.

Baking Time

Bake at 400°F until the cheese is melted.

Let sit for a few minutes, then plate and enjoy!
