Ingredients

  • 6 ears of fresh corn (steamed, shucked, and cooled)
  • 1 can of corn (drained)
  • 1 red bell pepper (cut into small uniform pieces)
  • 1 green bell pepper (cut into small uniform pieces)
  • 1 pint grape tomatoes (halved)
  • 1 small red onion (finely chopped)
  • 1 bunch fresh parsley (finely chopped)
  • 1 bunch fresh basil (chopped)
  • Garlic powder (to taste)
  • Garlic salt (to taste)
  • Cracked black pepper (to taste)
  • Extra virgin olive oil (drizzle to taste)
  • Balsamic glaze (drizzle to taste)

Instructions

Combine the Vegetables

In a large mixing bowl, add the steamed and shucked corn, drained canned corn, chopped red and green bell peppers, halved grape tomatoes, and finely chopped red onion. Mix well to combine.

Season the Salad

Add garlic powder, garlic salt, and cracked black pepper to taste. Toss until evenly coated.

Add Herbs and Dressing

Add in the fresh parsley and basil, then drizzle with extra virgin olive oil and balsamic glaze. Mix everything together until well combined.

Garnish and Serve

Transfer the salad to a serving bowl and garnish with a few extra basil leaves. Serve chilled or at room temperature.
