Place the flatbread on a cookie sheet. Drizzle with extra virgin olive oil and add some cracked black pepper. Bake at 375°F for 5–8 minutes until golden brown and crispy. Remove from the oven and set aside.
Spread the caramelized Vidalia onions evenly over the baked flatbread.
Sprinkle crumbled goat cheese over the onions, then layer on the quartered black mission figs and thinly sliced Parma prosciutto.
Season with cracked black pepper to taste, top with fresh arugula microgreens, and drizzle lightly with honey. Slice and serve warm.
