FRESH GARDEN TOMATO SAUCE

Rustic fresh-tomato sauce with garlic, basil, and chili flakes; toss with pasta and cheese.

Ingredients

  • 10 fresh tomatoes (roughly chopped)
  • 8 cloves garlic (sliced thin)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh basil
  • Garlic salt (to taste)
  • Cracked black pepper (to taste)
  • Red chili flakes (to taste)
  • Sea salt (to taste)
  • 1/2 cup grated Pecorino Romano cheese
  • 1 lb pasta

Instructions

Start with Olive Oil

Add a few tablespoons of olive oil into a pan and heat it up.

Sauté the Garlic

Add sliced garlic and sauté until slightly golden brown.

Add Heat and Tomatoes

Stir in red chili flakes, then add the chopped fresh tomatoes.

Season the Sauce

Season to taste with garlic salt and cracked black pepper.

Add Fresh Basil

Add lots of fresh basil and reduce the heat to a simmer.

Boil the Pasta

While the sauce simmers, bring salted water to a boil and cook the pasta until al dente.

Combine Pasta and Sauce

When both are done, toss the pasta with the sauce and drizzle the remaining olive oil over top.

Finish and Serve

Top with plenty of grated Pecorino Romano and extra basil. Enjoy!
