
Paper-thin zucchini rounds, egg-dipped and Bisquick-floured, pan-fried until crisp.

Wash the zucchini and slice it very thin into uniform circles. Set aside.
In a large dish, combine Bisquick and all-purpose flour in a 50/50 ratio. Season with salt, garlic powder, garlic salt, and cracked black pepper. Mix well.
In a separate bowl, whisk together eggs, milk, grated Pecorino Romano, and dried parsley. Season again with garlic powder, garlic salt, and cracked black pepper.
Dip each zucchini slice into the egg mixture, then coat it evenly in the flour mixture. Lay the coated slices on foil and let them rest for about 10 minutes before frying.
Heat canola oil in a frying pan over medium heat. Lightly pan fry the zucchini slices until golden brown on both sides. Remove and place on a paper towel-lined plate to absorb excess oil. Repeat until all slices are fried.
