Quick pasta with broccoli, crispy garlic, olives, and parmigiano.
"SO DELICIOUS!" - Alexia
Wash the broccoli and cut into uniform pieces. Add to a large pot filled 1/4 of the way with water. Steam for about 5 minutes until bright green and tender, then drain and set aside.
In a fry pan, heat the olive oil over medium-high heat. Add minced garlic and red chili flakes to taste. Sauté until the garlic turns golden and slightly crispy, being careful not to burn it.
Turn off the heat and fold in the sliced or halved black olives. Stir to coat them in the garlicky oil.
Bring a large pot of salted water to a rapid boil. Add the pasta and cook until al dente. Reserve about 1/4 cup of pasta water before draining.
Add the drained pasta to a large serving dish and drizzle with olive oil to prevent sticking. Add the steamed broccoli, then pour in the garlic and olive oil sauce.
Add the reserved pasta water and season with garlic salt, cracked black pepper, and sea salt. Toss well and top with plenty of grated Parmigiano Reggiano cheese.
Serve hot or cold—this simple, garlicky pasta dish is full of fresh flavor and comfort!
