Ingredients

  • 1 lb ground sirloin beef
  • 1/2 lb ground chuck beef
  • 1/2 cup Italian seasoned bread crumbs
  • 3 large eggs
  • 1/2 cup fresh parsley (chopped)
  • 1 cup grated Pecorino Romano cheese
  • 1/4 cup water
  • 3 cloves fresh garlic (minced)
  • Garlic salt (to taste)
  • Cracked black pepper (to taste)
  • 6 tablespoons Pastene extra virgin olive oil (plus more for bread)
  • 1 cup marinara sauce
  • 1/2 cup fresh basil (chiffonade cut)
  • 1/2 cup whole milk ricotta cheese
  • 1/3 cup Parmigiano Reggiano cheese (grated)
  • 1/3 cup shredded mozzarella cheese
  • 12 slices whole milk mozzarella cheese
  • 6 ciabatta buns (drizzled with olive oil and grilled)

Prepare the Meat Mixture

In a large mixing bowl, combine the ground sirloin, ground chuck, eggs, parsley, Pecorino Romano cheese, Italian seasoned bread crumbs, minced garlic, and water. Season to taste with garlic salt and cracked black pepper. Mix well by hand until fully combined. Form into large meatballs and set aside.

Make the Cheese Filling

In a separate bowl, combine the ricotta, Parmigiano Reggiano, and shredded mozzarella cheese. Mix until well blended and creamy.

Prepare the Ciabatta Buns

Drizzle the ciabatta buns with olive oil and grill them until slightly charred. Set aside for assembly.

Form the Stuffed Burgers

Flatten each meatball into patties. Place 1 tablespoon of the cheese filling in the center of half the patties. Top each with another patty and press the edges tightly to seal completely, forming a stuffed burger.

Cook the Burgers

Heat 6 tablespoons of olive oil in a large fry pan over medium-high heat. Add the burgers and sear on both sides until a golden-brown crust forms. Cover with foil, reduce heat to low, and cook for 12–15 minutes until medium-well. Top each burger with 2 slices of mozzarella cheese and let it melt before removing from the pan.
