Ingredients

  • 10–12 jumbo shrimp, washed, peeled, and deveined
  • 1 shallot, finely chopped
  • 8 cloves fresh minced garlic
  • 1/4 cup extra virgin olive oil
  • 1 (19 oz) can white beans, with liquid
  • 1 (5 oz) container baby spinach
  • 1 tablespoon salted butter
  • Garlic salt (to taste)
  • Cracked black pepper (to taste)
  • Red chili flakes (to taste)

Instructions

Sauté Aromatics

Add the olive oil to a hot pan. Add in the shallots and sauté until translucent. Then add the minced garlic and cook until lightly golden brown.

Cook the Shrimp

Add the shrimp into the pan along with red chili flakes to taste. Sauté until the shrimp turn pink and slightly golden.

Add the Spinach and Beans

Add in the baby spinach and season with garlic salt and cracked black pepper. Once the spinach wilts, stir in the white beans with their liquid.

Finish and Serve

Reduce the heat and simmer until the sauce thickens slightly. Stir in the butter to finish. Plate up and serve immediately.
