Broiled cast-iron salmon topped with pesto and fresh parsley.
"That cast iron gave this salmon the perfect crust — bright, zesty, and loaded with flavor!" - Alexia
Wash and pat dry the salmon using a paper towel. Season both sides with garlic salt, garlic powder, and cracked black pepper. Squeeze fresh lemon juice over the top and drizzle with extra virgin olive oil.
Preheat a cast iron skillet on high heat until very hot. Place the salmon skin side down and sear for 6 minutes.
Add fresh lemon slices to the skillet and transfer it to a preheated 400°F oven. Roast for 12 minutes. Then switch the oven to broil and broil for 3 minutes until the salmon is golden brown. **Use an oven mitt—the handle will be hot!**
Remove from the oven and top the salmon with pesto sauce and chopped fresh parsley. Serve hot with extra lemon slices for garnish.
