Wash and slice the peppers into 1/2-inch strips. Slice the Vidalia onion into rings. Slice the sausage into 1-inch pieces.
Add olive oil to the bottom of a large baking dish. Layer in the sliced peppers and onions. Season to taste with garlic powder, cracked black pepper, and garlic salt. Stir well.
Add the sliced sausage into the pan with the peppers and onions. Mix well, then pour in the tomato sauce. Drizzle more olive oil on top.
Cover the dish with aluminum foil and bake in a preheated 375°F oven for about 1-1/2 hours.
Remove the foil, stir well, and return to the oven for another 45 minutes until the peppers and onions are tender, the sauce has reduced slightly, and the sausage is lightly browned.
Remove from the oven and let sit for 15–20 minutes before serving. Garnish with fresh basil and enjoy as-is, over pasta, mixed into rice, or in a sandwich.
