In a large soup pot, combine the water, beans, chicken stock, carrots, potatoes, and celery. Season with cracked black pepper and bring to a simmer.
In a separate pan, heat the olive oil over medium heat. Add the chopped Vidalia onion and sauté until translucent. Add the ham and cook until lightly crispy. Pour the onion and ham mixture into the soup pot.
Turn the heat to high and bring the soup to a rapid boil for 5 minutes. Then reduce the heat to low and simmer for 3 hours, stirring frequently.
