Preheat the oven to 375°F. Pat the chicken thighs dry and place them on a large cookie sheet or baking dish.
Season the chicken heavily on both sides with cracked black pepper, garlic salt, garlic powder, and Montreal chicken seasoning. Drizzle generously with extra virgin olive oil and rub to coat evenly.
Arrange the chicken skin side down on the baking sheet and roast for 1 hour.
Remove the pan from the oven, flip the chicken thighs skin side up, and roast for another 30 minutes until golden brown and the meat pulls easily from the bone.
Remove from the oven, let rest for a few minutes, and garnish with fresh chopped parsley before serving.
