Preheat the oven to 375°F and line a cookie sheet with parchment paper. Lay the prosciutto slices flat on the sheet.
Spoon a small dollop of garlic and herb goat cheese onto each slice of prosciutto.
Roll the prosciutto slices tightly around the cheese. Bake for 10–15 minutes until the prosciutto is crisp and golden.
Remove from the oven and arrange on a serving platter. Drizzle with hot honey and sprinkle with crushed pecans. Serve warm and enjoy!
