
Bone-in breasts roasted with onion, lemon, carrots, and herbs until juicy and tender.

Preheat oven to 375–400°F. Spray a Pyrex baking dish with cooking spray.
Wash and dry the chicken breasts thoroughly, then place them in the dish. Season heavily with cracked black pepper, garlic powder, garlic salt, and dried parsley.
Slice the onion and lemon and arrange them all around and on top of the chicken. Chop the fresh parsley and sprinkle it throughout the pan. Add the matchstick carrots around the chicken and season again with the same spices.
Drizzle olive oil generously over the chicken and vegetables. Cover the dish with foil and place it into the preheated oven. Roast for about 1 hour.
Remove the foil, baste the chicken, and continue roasting for another 30–40 minutes until golden brown and the meat pulls away from the bone easily. Serve warm with pan juices spooned over the top.
