Preheat the oven to 425°F. Spray a Pyrex baking dish with cooking spray. Cut the tomatoes into large pieces and add them to the dish.
Season the tomatoes generously with garlic salt, garlic powder, and cracked black pepper. Drizzle with olive oil. Roast uncovered at 425°F for 1 1/2 to 2 hours, until the tomatoes are soft and slightly charred.
After roasting, turn off the oven and leave the tomatoes inside for another 2 hours to dry out slightly and concentrate their flavor.
