Set your oven to 375°F to preheat while you prepare the ingredients.
Peel, wash, and cut the potatoes into uniform wedges. Thinly slice the Vidalia onion.
Drizzle some olive oil into a large baking dish, then add the potatoes and onions. Season with cracked black pepper and garlic salt, mix well, and drizzle again with olive oil.
Cut the sausage into 2-inch pieces and scatter them around the potatoes and onions. Drizzle once more with olive oil.
Cover the baking dish with foil and bake for 1 to 11/2 hours, until the sausage is partially browned and the potatoes are fork tender.
Remove the foil, mix the sausage and potatoes, then add the vinegar peppers and fresh parsley.
Return the dish to the oven uncovered and bake for another hour, until the sausage is browned and the potatoes are golden and crispy on the outside and soft on the inside.
Let rest for a few minutes and serve hot, straight from the dish.
