Wash and cut the eggplant into small pieces, leaving the skin on. Add olive oil to a pan, season with sea salt and cracked black pepper, and sauté until tender. Set aside.
Clean and slice the mushrooms. Heat olive oil in a pan, season with sea salt and cracked black pepper, and sauté until tender and slightly caramelized. Set aside.
In a large pan, heat 4 tablespoons of olive oil. Add minced garlic and red chili flakes, and sauté until slightly caramelized. Add grape tomatoes, season with salt and pepper, then add the ground peeled tomatoes. Simmer on low for 20 minutes.
While the sauce simmers, salt your pasta water and bring to a boil. Cook the pasta until extra al dente (a couple of minutes under). Drain and set aside.
Add the eggplant, mushrooms, and fresh basil into the sauce. Stir to combine and cook for a few minutes. Turn off the heat, then fold in the pasta and Pecorino Romano cheese. Mix well.
Hollow out the center of each sourdough loaf to form bowls. Drizzle olive oil in and around the inside of each bread bowl.
Add a scoop of the pasta mixture into each bread bowl, then layer with smoked mozzarella and fresh mozzarella. Add another scoop of pasta, then top with shredded mozzarella and shaved Parmesan.
Bake at 400°F until the cheese is melted and bubbling. Top with fresh basil and serve immediately.
