Spicy tomato-garlic shrimp served over jasmine rice.
"Simple, spicy, and absolutely mouthwatering — this shrimp over jasmine rice will have you saying, ‘Now that’s flavor!’" - Alexia
Wash, peel, and devein the shrimp. Heat olive oil in a large pan over medium heat. Add minced garlic and red chili flakes, sautéing until lightly golden.
Add the shrimp to the pan and cook for a few minutes until slightly pink. Remove from the pan and set aside.
In the same pan, add sangria tomatoes. Season to taste with sea salt and cracked black pepper. Pour in the white wine and simmer to reduce the alcohol for a few minutes. Add the marinara sauce, reduce the heat, and simmer on low for 25 minutes until the tomatoes burst and the sauce thickens.
Return the shrimp to the pan. Squeeze in the juice from half a lemon and add hot sauce to taste. Simmer for a couple of minutes until the shrimp are fully cooked and coated in the sauce.
Cook the Grain Trust jasmine rice according to package instructions. Add the rice to a large bowl or plate, top with the spicy shrimp mixture, and garnish with fresh parsley and lemon slices.
