Ingredients

  • 3 lb top round beef (tenderized and pounded thin)
  • 2 (28 oz) cans crushed tomatoes
  • 1/2 cup extra virgin olive oil
  • 10 cloves fresh minced garlic
  • Red chili flakes (to taste)
  • Garlic salt (to taste)
  • Cracked black pepper (to taste)
  • Sea salt (to taste)
  • 1 bunch fresh mint leaves
  • 1 bunch fresh oregano

Instructions

Season the Beef

Season both sides of the beef with sea salt, garlic salt, and cracked black pepper.

Sear the Beef

Heat olive oil in a pan. When hot, add the beef and brown on both sides. Remove and set aside.

Prepare the Baking Dish

Place the browned beef in a large baking dish.

Flavor the Oil

In the same pan, add minced garlic to the hot oil, mixing to pick up all the browned bits. Pour the garlic and oil mixture over the beef.

Add Tomatoes and Herbs

Pour the crushed tomatoes over the beef. Season with red chili flakes, garlic salt, and cracked black pepper.

Add Fresh Herbs

Tear fresh oregano and mint leaves and sprinkle them over the sauce. Drizzle with olive oil.

Bake the Dish

Cover with foil and bake in a preheated 375°F oven for 2 hours.

Serve hot over creamy mashed potatoes with a side of peas, just like Mama Mary did.
