Wash and cut the zucchini into 1-inch pieces. Slice the Vidalia onions thinly.
Add extra virgin olive oil to a pan and begin to caramelize the onions. Season with cracked black pepper, garlic powder, and garlic salt. Add a little water to help them reduce and soften.
Once the onions are translucent and caramelized, add in the zucchini. Season again with garlic salt, garlic powder, and black pepper. Add a splash of water and cover with foil to steam and soften.
Stir in the sliced pepperoni and continue cooking on low to medium heat, stirring frequently until the zucchini, onions, and pepperoni begin to lightly brown.
Pour in the cannellini beans along with their liquid. Add a pinch of red chili flakes for spice and simmer for about 5 minutes to blend the flavors.
Remove from heat and sprinkle with grated Pecorino Romano cheese. Serve as a main dish, over pasta, on crusty bread, or with rice.
